I am totally pleased with salmon. 90% of the time when we go out to restaurants I order salmon. I love it! I am a fish eater.
I found this delicious salmon recipe from Rasa Malaysia. I tweaked it a little and added my own spin on it. It has a sweet and spicy tater to it. This recipe is meal prepping friendly as well.
Here is what you will need:
- Salt & pepper
- Cayenne pepper
- Lemon juice
- Olive oil
- Minced garlic
- Lemon wedges (optional)
For your vegetables:
-Add olive oil to your pan. Add vegetables, salt and pepper, and let them cook down until tender. Make sure that you check on your veggies, and stir to avoid burning.
For your salmon:
-Heat your skillet with olive oil.
-Mix honey, and lemon juice in a small bowl or cup and add a little water to help loosen the mixture.
-Add salmon and slightly cook on both sides.
-Add honey mixture into the pan with salmon and cook until done.
